吃過最好吃的貝果,沒有之一🥳||咸甜口的黑芝麻餡料➕略有韌勁的貝果

一口下去,香迷糊了!越嚼越香~

方子可以做6個黑芝麻貝果,冷卻後密封保存,

吃的時候用微波爐中火叮40秒左右即可!

也可以切開用平底鍋小火烙一下都行。

✔️黑芝麻餡:

黑芝麻粉75g

黃油或椰子油

糖18g 全蛋液18g 鹽1g

✔️貝果胚:

高筋麵粉300g 鹽4g 黑芝麻18g

細砂糖5g 水175g 乾酵母3g

✔️煮貝果水

1000ml水➕40g糖

做法:

1.黑芝麻餡料混合拌勻,冰箱冷藏備用。

2.除餡料以外的原料混合,揉成光滑的麵糰,分成6份,滾圓,蓋保鮮膜鬆弛15分鐘。

3.取一麵糰擀成長方形,表面抹上黑芝麻餡料,捲起來,收口捏緊。一端擀薄,包裹另一頭,收口捏緊。

4.溫暖處醒發1.5倍大。1000ml水➕40g糖煮至底部冒泡,關小火,兩面各煮30秒撈出。上下火200度烤20分鐘即可。

‼️粉類吸水性不一樣,預留5g左右水,根據麵糰狀態適當增減,揉好的麵糰是軟硬適中的。

芝麻粉是熟黑芝麻打成粉使用的。

✔️Black sesame filling:

75g black sesame powder

Butter or coconut oil

18g sugar 18g whole egg liquid 1g salt

✔️Bager base:

300g high-gluten flour 4g salt 18g black sesame

5g fine sugar 175g water 3g dry yeast

✔️Boil bagel water

1000ml water + 40g sugar

Method:

1. Mix the black sesame filling and refrigerate for later use.

2. Mix the ingredients except the filling, knead into a smooth dough, divide into 6 portions, roll into balls, cover with plastic wrap and relax for 15 minutes.

3. Take a piece of dough and roll it into a rectangle, spread black sesame filling on the surface, roll it up, and pinch it tightly. Roll one end thin, wrap the other end, and pinch it tightly.

4. Let it rise 1.5 times in a warm place. Boil 1000ml water + 40g sugar until bubbles appear at the bottom, turn down the heat, and cook each side for 30 seconds before removing. Bake at 200 degrees for 20 minutes.

‼️Flours have different water absorption properties. Reserve about 5g of water. Increase or decrease the amount according to the state of the dough. The kneaded dough is moderately soft and hard.

Sesame powder is made by grinding cooked black sesame into powder.
