土豆釀茄子

食材:
茄子1根、土豆(或香芋)半個、香蔥少許、生抽1湯匙、蚝油1湯匙、水1碗、澱粉2茶匙、麵粉適量

1.茄子洗乾淨,切成1厘米厚左右的片,每片厚片中間切一刀,切到1/3處,注意不要切斷
2.把茄子放入淡鹽水中浸泡10分鐘左右,浸泡好後倒掉水把茄子瀝干水

3.把土豆去皮後蒸熟,再壓成土豆泥
4.把土豆泥釀入茄子裡,抹平

5.茄子兩面沾上麵粉,沾好後拿起來抖掉一些乾粉
6.鍋內放入油,油量多一些,把油燒熱,用中大火,放入茄子煎到兩面金黃後裝起

7.把生抽、蚝油、水和澱粉混合在一起攪拌均勻
8.調好的澱粉水倒入鍋內煮到濃稠

9.最後把茄子倒入鍋內輕輕翻拌均勻上色後,撒上蔥花即可出鍋
